K+M Extravirgin Chocolates are the result of five years of intensive research by Chef Thomas Keller and renowned Tuscan olive oil producer Armando Manni. With the assistance of master chocolatier Chi Bui and in cooperation with the University of Florence, Chef Keller and Manni developed a unique method of producing chocolate that preserves the naturally beneficial antioxidant qualities of cocoa beans, most of which are lost in traditional methods of production.
These single-origin cocoa beans are transformed by hand in the Napa Valley into distinct, complex chocolates with a uniformly rich, smooth texture.
